Ingredients
- 250 grams Beef steak (skirt or flank)
- 4 pieces Corn tortillas
- 100 grams Oaxaca cheese (or Chihuahua)
- ½ piece White onion
- 1 clove Garlic
- 2 pieces Guajillo chili (dried)
- 1 piece Red tomato
- 1 tablespoons Vegetable oil
- 1 to taste Salt
- 1 pinch Ground black pepper
Directions
- Make the red sauce: Roast 1 tomato and 1 garlic clove. Hydrate 2 guajillo chilies in hot water. Blend with the roasted vegetables, salt, and a little soaking water until integrated. Strain and sauté in 1 tablespoon of oil for 5 minutes.
- Cook the steak: Cut 250g steak into small cubes. Sauté in 1 tablespoon of hot oil over high heat. Add half an onion, finely chopped, and cook until translucent. Season with salt and pepper to taste.
- Prepare the tortillas: Heat 4 corn tortillas on a griddle until pliable.
- Assemble the volcanes: Place a portion of steak in the center of each tortilla. Generously top with 100g of shredded Oaxaca cheese.
- Form and seal: Fold the edges of the tortilla towards the center to cover the filling, creating a package. Press to seal.
- Brown and serve: Heat a little oil in a pan over medium heat. Brown the volcanes on both sides until golden and the cheese is melted. Bathe with the red sauce and serve hot.
