Ingredients
- 1 cup Fresh cilantro (Substitute: flat-leaf parsley if unavailable)
- ½ cup Fresh lime juice (Substitute: lemon juice)
- 1 clove Garlic
- 3 tablespoons Extra virgin olive oil
- ½ teaspoon Salt
- ¼ teaspoon Freshly ground black pepper
- ½ piece Serrano chile (optional, seeded)
Directions
- Destem the cilantro and chop it coarsely. Peel the garlic and remove seeds from the serrano chile if using.
- Squeeze the juice of half a fresh lime.
- Combine cilantro, lime juice, garlic, serrano chile (optional), salt, and pepper in a blender.
- Blend until integrated, then add olive oil in a stream while blending to emulsify.
- Taste and adjust seasoning. Transfer to an airtight jar and refrigerate.
