  2. In a bowl, combine the tamarind juice with the piloncillo (or honey), lime juice, and salt. Mix until the sweetener dissolves.
  3. Add the dried árbol chiles (whole or deseeded) to infuse the spiciness.
  4. Gradually incorporate the olive oil while whisking to create an emulsion.
  5. If desired, add fresh cilantro sprigs for infusion and remove before serving.
  6. Taste and adjust seasoning. The vinaigrette should have a balance of sour, sweet, and spicy.
