Ingredients
- 200 grams Thin dry fideo noodles
- 3 medium Ripe tomatoes
- 2 cloves Garlic
- ½ piece White onion
- 1½ liters Homemade chicken broth
- 2 tablespoons Neutral vegetable oil
- Salt, al gusto
- Ground black pepper, una pizca
- 1 sprig Fresh cilantro
Directions
- Blend the peeled tomatoes, garlic cloves, and a quarter of the onion with a little broth. Strain the mixture and set aside.
- Heat the oil in a pot, toast the dry fideo noodles until they are uniformly golden. This prevents them from becoming mushy.
- Pour the strained tomato mixture over the fideo noodles. Cook for 3-5 minutes, stirring, until it thickens.
- Add the remaining chicken broth, salt, and pepper. Bring to a boil.
- Reduce heat, cover, and simmer for 10-15 minutes, or until the fideo noodles are al dente. Adjust seasoning.
- Serve hot with a sprig of cilantro.
