  1. Season the pork ribs with salt and pepper.
  2. Brown the ribs in hot lard in a pot until well-seared. Remove and set aside.
  3. Sauté chopped onion and minced garlic in the same pot.
  4. Add chopped tomatillos and serrano chiles, cook for 5 minutes.
  5. Blend the tomatillos, chiles, fresh cilantro, and a little water until a smooth sauce is obtained.
  6. Return the ribs to the pot with the sauce. Cover with liquid if necessary.
  7. Cook over low heat, covered, for 45-60 minutes until the meat is very tender.
  8. Adjust seasoning and serve hot.
