Ingredients
- 2 large Chicken breasts
- 1 cup Raw pumpkin seeds (pepitas)
- 4 medium Tomatillos
- 2 medium Serrano peppers
- ¼ medium White onion
- 1 large Garlic clove
- ½ bunch Fresh cilantro
- 2 sprigs Epazote leaves
- 2 tablespoons Toasted sesame seeds
- 1 tablespoons Lard
- 2 cups Homemade chicken broth
- Salt, to taste
- Freshly ground black pepper, to taste
Directions
- Cook chicken breasts in salted water. Reserve the broth and shred the chicken.
- Roast the tomatillos, serrano pepper, onion, and garlic until tender and lightly charred.
- Toast the pumpkin seeds and sesame seeds separately in a dry skillet until fragrant.
- Blend the roasted vegetables, cilantro, epazote, pumpkin seeds, sesame seeds, and 1 cup of chicken broth until a smooth sauce forms.
- Heat the lard in a pot. Fry the pipián sauce over medium heat for 5 minutes, stirring. Add the remaining broth and cook over low heat until thickened.
- Add the shredded chicken to the sauce and cook for 5 more minutes. Serve hot with corn tortillas.
