Ingredients
- 500 grams Italian zucchini
- 2 pieces Roma tomato
- ½ piece White onion
- 1 piece Serrano chile
- 1 clove Garlic
- 1 sprig Epazote
- 1 tablespoons Vegetable oil
- Salt, to taste
- Black pepper, to taste
Directions
- Cut the zucchini into slices or cubes. Finely chop the tomato, onion, chile, and garlic.
- Heat the oil in a skillet over medium heat. Sauté the onion and garlic until translucent.
- Add the serrano chile and tomato. Cook until the tomato softens.
- Incorporate the zucchini and the sprig of epazote. Season with salt and pepper.
- Cook for 10-15 minutes, stirring occasionally, until the zucchini is tender but firm.
- Remove the epazote before serving.
