Ingredients
- 2 pieces Corn tortillas
- ¼ cup Neutral vegetable oil
- 2 pieces Farm eggs
- 2 pieces Ripe tomatoes
- 1 piece Serrano chile
- 1 clove Fresh garlic
- ½ piece Fresh white onion
- ½ teaspoon Dried Mexican oregano
- Sea salt, al gusto
- 2 tablespoon Queso fresco (crumbled)
- 1 tablespoon Fresh cilantro (chopped)
Directions
- Roast tomatoes, serrano chile, garlic, and a quarter of an onion until charred. Blend with Mexican oregano and salt. Adjust consistency with water if needed.
- Fry the corn tortillas in vegetable oil until lightly golden. Drain and set aside on the serving plates.
- Fry the two eggs sunny-side up in the same skillet until they reach your desired doneness, being careful not to break the yolk. Season with salt.
- Place the eggs on top of the tortillas on each plate. Bathe with the ranchera red sauce.
- Finish with crumbled queso fresco and fresh chopped cilantro.
