Ingredients
- 30 grams Dried hibiscus flowers
- 120 ml Water
- 3 tablespoons Extra virgin olive oil
- 1 tablespoon Honey
- 1 tablespoon Fresh cilantro
- ½ teaspoon Sea salt
- ¼ teaspoon Freshly ground black pepper
Directions
- Boil the dried hibiscus flowers in water until they are soft and the liquid is an intense red concentrate. Strain and discard the flowers, reserving the liquid. Let the concentrate cool.
- In a bowl, combine the hibiscus concentrate, olive oil, honey, finely chopped cilantro, salt, and pepper.
- Emulsify the mixture by whisking vigorously until a homogeneous vinaigrette is obtained.
- Taste and adjust seasoning if necessary.
