Ingredients
- 3 cups Tender corn kernels
- 1 tablespoons Lard
- ½ piece White onion
- 1 piece Garlic clove
- ½ cup Homemade chicken broth
- ¼ cup Mayonnaise
- ¼ cup Cotija cheese (grated)
- 1 teaspoon Chile piquín powder
- 2 pieces Fresh lime juice
- Salt, to taste
Directions
- Sauté finely chopped onion and garlic in lard until translucent.
- Add corn kernels and cook for 5 minutes, allowing them to brown slightly.
- Incorporate homemade chicken broth and salt. Cook over low heat, covered, for 10-12 minutes until the corn is tender and the liquid has reduced.
- Remove from heat and mix with mayonnaise until evenly coated.
- Serve in glasses or small bowls, topping with grated Cotija cheese, chile piquín powder, and fresh lime juice.
