Ingredients
- 500 grams Beef for broth (chuck, shank)
- 3 liters Water
- 1 piece White onion
- 3 cloves Garlic
- 2 pieces Whole cloves
- Salt, to taste
- Finely chopped white onion (for serving), to taste
- Fresh chopped cilantro (for serving), to taste
- Lime (cut into quarters, for serving), to taste
Directions
- Place the beef in a large pot with enough water to cover and bring to a boil.
- Rigorously skim the broth at the beginning of cooking to obtain a clear consommé.
- Add the whole onion, garlic cloves, and whole cloves. Season with salt.
- Reduce heat to low, partially cover, and cook for 1.5 to 2 hours, until the meat is tender.
- Adjust salt. Shred or cut the meat and return it to the broth. If you want more intense flavor, reduce the broth uncovered briefly.
- Serve hot with garnishes of chopped onion, fresh cilantro, and lime on the side.
