Ingredients
- 500 grams Raw shrimp, peeled and deveined (large)
- 3 medium Ripe tomatoes
- ½ small White onion
- 2 large Garlic cloves
- 1 medium Serrano chile
- 4 tablespoons Fresh lime juice
- ¼ cup Fresh cilantro, chopped
- 1 medium Ripe avocado
- 1 to taste Salt
- ½ tsp Freshly ground black pepper
- 2 tablespoons Ketchup (optional, for color and sweetness)
- 1 tablespoon Neutral vegetable oil
Directions
- Prepare the shrimp: peel, devein, and cut into pieces if large. Dry them thoroughly.
- Blend tomatoes, half onion, 2 garlic cloves, 1 serrano chile, and the juice of 4 tablespoons of lime. Add 2 tablespoons of ketchup if you want extra color and sweetness. Blend until a smooth sauce is obtained.
- Strain the blended sauce to obtain a smooth broth. Season with salt and freshly ground black pepper.
- Heat 1 tablespoon of vegetable oil in a skillet over medium-high heat. Sauté the shrimp for 1-2 minutes per side, until they are pink and opaque. Avoid overcooking them.
- Add the cooked shrimp to the tomato broth. Mix well.
- Dice 1 avocado and finely chop ¼ cup of cilantro. Add the avocado and half of the cilantro to the cocktail just before serving. Mix gently.
- Serve cold in cocktail glasses, garnished with the remaining cilantro.
