Ingredients
- 1½ kg Beef chuck roast (aguayón or diezmillo)
- 5 pieces Avocado leaves
- 4 pieces Banana leaves (wilted)
- 4 cloves Garlic
- ½ piece White onion
- 1 tablespoon Coarse salt
- 1 teaspoon Whole black peppercorns
- 2 pieces Cloves
- ½ piece Cinnamon stick
- ½ teaspoon Cumin seeds
- ½ cup Water
Directions
- Preheat oven to 160°C (325°F).
- Season the beef chuck roast with coarse salt and whole black peppercorns.
- Prepare a spice paste by grinding in a molcajete or blender: garlic, 1/4 onion, cloves, cinnamon stick, cumin, and salt. Lightly moisten with water.
- Marinate the meat with the spice paste and cover with avocado leaves.
- Wrap the meat in previously wilted banana leaves, forming an airtight package.
- Place the package on a baking sheet and bake for 4-5 hours, or until the meat is very tender and shreds easily.
- Shred the meat and mix it with its juices. Serve with desired sides.
