Ingredients
- 500 grams Ground beef
- 250 grams Ground pork
- 1 unit Egg
- ½ cup Cooked rice (cold)
- ¼ cup Finely chopped white onion
- 1 clove Minced fresh garlic
- 1 tablespoon Finely chopped fresh spearmint or mint
- 1 teaspoon Salt
- ½ teaspoon Ground black pepper
- 2 tablespoons Neutral vegetable oil
- 3 pieces Chipotle peppers in adobo sauce
- 2 pieces Medium tomato (red tomato)
- 2 cloves Fresh garlic
- ½ piece White onion
- 2 cups Homemade chicken broth
- ½ cup Mexican crema
- Salt to taste
Directions
- Mix meatball ingredients: Combine ground meats, egg, cooked rice, chopped onion, minced garlic, spearmint, salt, and pepper in a bowl. Mix gently until combined.
- Form meatballs: Create uniform balls with the mixture and set aside.
- Blend sauce base: In a blender, process chipotle peppers, tomatoes, garlic, and onion until smooth.
- Sauté and cook sauce: Heat 1 tablespoon of oil in a pot. Sauté the blended sauce for 5 minutes. Add the meatballs and chicken broth. Simmer, covered, for 20-25 minutes, until meatballs are cooked through.
- Incorporate crema: Remove from heat, add Mexican crema, and stir. Adjust salt. Serve hot.
