Ingredients
- 500 grams Beef (skirt steak or sirloin)
- 100 grams Smoked bacon
- 1 piece White onion
- 1 piece Green bell pepper
- 1 piece Red bell pepper
- 150 grams Oaxaca cheese (Quesillo)
- 2 tablespoons Neutral vegetable oil
- Salt, to taste
- Ground black pepper, to taste
- Corn tortillas, for serving
Directions
- Cut the beef into thin strips and season with salt and pepper.
- Dice the bacon, julienne the onion, and cut the peppers (green and red) into strips.
- Shred the Oaxaca cheese.
- Brown the bacon in a skillet over medium-high heat until crisp. Remove and reserve.
- Sauté the onion and peppers in the bacon fat (add oil if necessary) until tender.
- Add the beef to the skillet and cook until browned.
- Incorporate the crispy bacon into the skillet.
- Cover with the shredded Oaxaca cheese and cover until melted.
- Serve immediately with corn tortillas.
