Ingredients
- 600 grams firm tofu
- 4 small pieces bok choy
- 200 grams shiitake mushrooms
- 1 piece red bell pepper
- 4 cloves garlic
- 2 cm fresh ginger
- 4 tablespoons low-sodium soy sauce
- 2 tablespoons sesame oil
- 2 tablespoons cornstarch
- 1 tablespoon sesame seeds
- 2 tablespoons olive oil
Directions
- Press the firm tofu for 20 minutes to remove excess moisture and ensure a better texture.
- Cube the tofu and marinate in an emulsion of soy sauce and sesame oil for 15 minutes.
- Lightly coat the cubes with cornstarch, shaking off the excess.
- In a hot wok or skillet with oil, sear the tofu until evenly golden brown and crispy (8 minutes). Set aside off the heat.
- Sauté finely chopped garlic and ginger for 1 minute until they flavor the oil.
- Add the shiitake mushrooms and bell pepper, maintaining medium-high heat for 5 minutes.
- Add the bok choy and continue stir-frying for 3 minutes until the stems are al dente.
- Return the tofu to the wok, deglaze with a splash of soy sauce, and stir-fry to combine.
- Finish the presentation with scattered sesame seeds.
