Ingredients
- 200 grams Chicken breast
- 3 cloves Garlic
- 2 units Thai chili (bird's eye peppers)
- 1 cup Thai basil leaves
- 1 tablespoon Fish sauce
- 1 teaspoon Soy sauce
- ½ teaspoon Palm sugar
- 1 tablespoons Vegetable oil
- 300 grams Cooked jasmine rice
- 2 units Fried egg (optional)
Directions
- Chop the chicken into bite-sized pieces.
- Pound the garlic and Thai chilies in a mortar and pestle to a coarse paste or mince them finely.
- Prepare the sauce by combining fish sauce, soy sauce, and palm sugar.
- Heat the oil in a wok over high heat until it lightly smokes.

- Add the chicken and stir-fry vigorously until sealed and cooked through.
- Add the prepared sauce and toss well to ensure even coating.
- Cook until the sauce reduces and thickens, caramelizing the chicken.
- Add the Thai basil leaves and stir until they soften.
- Serve over jasmine rice, topped with a fried egg if desired.
