Ingredients
- 500 grams Beef for stewing
- 400 ml Coconut milk
- 1 tablespoons Vegetable oil
- 1 medium Yellow onion
- 4 medium Potatoes
- 4 tablespoons Massaman curry paste
- 2 tablespoon Palm sugar
- 4 tablespoons Fish sauce
- 100 grams Roasted unsalted peanuts
- 4 units Bay leaves
- 4 pods Cardamom pods
- 4 units Cloves
- Cinnamon stick, al gusto
- 240 ml Water or beef broth
- Fresh cilantro for garnish, al gusto
Directions
- Cut beef into 1.5-inch cubes. Peel and chop potatoes into wedges. Cut onion into quarters.
- Heat oil in a large pot over medium-high heat. Sauté Massaman curry paste for 1-2 minutes until fragrant.
- Stir in coconut milk. Add beef, bay leaves, cardamom, cloves, and cinnamon. Bring to a boil.
- Reduce heat, cover, and simmer for 1 hour until beef is tender.
- Add potatoes and onion. Simmer, covered, for another 20-25 minutes, until potatoes are cooked.
- Season with palm sugar and fish sauce. Cook for 5 minutes. Remove whole spices.
- Stir in half the peanuts. Serve with cilantro and remaining peanuts.
