  1. Squeeze the lemon, orange, and grapefruit juices. Combine the three juices in a bowl.
  2. Add the low-sodium soy sauce and mirin to the citrus mixture. Stir until combined.
  3. Place the katsuobushi and kombu in a container. Pour the liquid mixture over them.
  4. Let infuse at room temperature for 20 minutes.
  5. Strain the sauce through a fine-mesh sieve, pressing lightly to extract all the liquid.
  6. Store in an airtight jar in the refrigerator.
