Ingredients
- 60 grams Japanese short-grain rice
- 75 ml water
- salt, al gusto
Directions
- Rinse the rice 3-4 times until the water runs almost clear. Soak in the cooking water for 30 min.
- Bring to a boil over medium-high heat, covered. At the first boil, reduce to the lowest heat and cook for exactly 12 min without uncovering.
- Turn off the heat and let rest, covered, for 10 min without opening.
- Mix with an up-and-down cutting motion. Divide into 6 portions of ~200g.
