  1. Hydrate the gelatin in cold water until soft.
  2. Heat the heavy cream and sugar in a saucepan until the sugar dissolves, without boiling.
  3. Remove from heat, add the vanilla and hydrated gelatin. Mix until completely dissolved.
  4. Pour the mixture into individual molds and let cool to room temperature.
  5. Refrigerate the panna cotta for a minimum of 4 hours until set.
  6. Prepare the mixed berry sauce: cook mixed berries, sugar, and lemon until a sauce is obtained.
  7. Lightly blend the sauce if a finer texture is desired.
  8. Let the sauce cool.
  9. Unmold the panna cotta (optional) or serve in the container.
  10. Cover with the cold mixed berry sauce.
