Ingredients
- 300 grams Elbow macaroni
- 60 grams Unsalted butter
- 60 grams All-purpose flour
- 750 ml Whole milk
- 250 grams Cheddar cheese (medium or sharp)
- 100 grams Gruyere cheese
- 1 teaspoon Salt
- ½ teaspoon Freshly ground black pepper
- ¼ teaspoon Grated nutmeg
Directions
- Cook macaroni in boiling salted water until al dente. Drain and set aside.
- In a medium saucepan, melt butter over medium heat. Stir in flour and cook for 1-2 minutes, stirring to form a roux.
- Gradually add milk, whisking to combine. Bring to a gentle boil and cook, stirring, until thickened.
- Remove from heat. Stir in grated cheeses until completely melted. Season with salt, pepper, and nutmeg.
- Combine cooked macaroni with cheese sauce. Serve hot.
