Ingredients
- 2 Large baking potatoes
- 1 cup Shredded cheddar cheese
- 4 slices Crispy cooked bacon, chopped
- 2 tablespoons Fresh chives, chopped
- 2 tablespoons Sour cream
- Salt, to taste
- Freshly ground black pepper, to taste
Directions
- Preheat oven to 400°F (200°C). Wash and dry potatoes, then prick several times with a fork.
- Bake potatoes directly on the oven rack for 45-60 minutes, or until tender.
- Cook bacon in a skillet until crisp. Drain and finely chop.
- Cut baked potatoes in half lengthwise. Lightly scoop out the center of each half, leaving a border.
- Fill potato halves with shredded cheddar cheese. Bake for 5-7 more minutes until cheese is melted.
- Top potatoes with chopped bacon and fresh chives. Add a tablespoon of sour cream to each.
- Serve hot.
