Ingredients
- 1 cup rolled oats
- ¼ cup nuts
- ¼ cup pumpkin seeds
- ¼ cup sunflower seeds
- ¼ cup agave honey
- ¼ cup coconut oil
- ¼ teaspoon cinnamon
- ¼ teaspoon vanilla extract
- ¼ cup dried fruit
Directions
- Preheat oven to 160°C (325°F) and prepare a baking sheet with parchment paper or a silicone mat.
- Perform 'mise en place' by mixing oats, nuts, and seeds in a bowl large enough to avoid spills when combining.
- Emulsify the agave honey with the hot coconut oil (approx. 60°C/140°F) and incorporate the vanilla extract and ground cinnamon.
- Pour the emulsion over the dry ingredients and homogenize until the entire surface of the oats is hydrated and shiny.
- Distribute evenly on the baking sheet, ensuring the layer thickness does not exceed one centimeter for optimal toasting.
- Bake for 25-30 minutes, stirring halfway through the process to ensure uniform coloring.
- Remove when golden amber. Cool to room temperature to allow sugar crystallization (crunchy texture).
- Incorporate the dried fruits once the base is cool to prevent them from hardening from residual heat.
- Package in airtight containers and store in a dry place for up to 14 days.
