Ingredients
- 4 units Fresh eggs (yolks)
- 100 grams Granulated sugar
- 500 grams Mascarpone cheese
- 200 grams Ladyfingers (Savoiardi biscuits)
- 250 ml Strong espresso coffee
- 2 tablespoons Coffee liqueur (optional)
- 30 grams Unsweetened cocoa powder
Directions
- Separate the egg yolks from the whites. Whisk the yolks with sugar over a double boiler (or with an electric mixer) until foamy and pale.
- Fold the mascarpone into the whisked yolk mixture with enveloping motions until a smooth, lump-free texture is achieved.
- Prepare strong espresso coffee and let it cool. Add coffee liqueur if desired.
- Briefly dip the ladyfingers in the coffee, avoiding over-saturating them to maintain their structure.
- Form the first layer of dipped ladyfingers in your chosen dish.
- Spread half of the mascarpone cream over the ladyfinger layer.
- Repeat with a second layer of ladyfingers and finish with the remaining mascarpone cream, smoothing the surface.
- Refrigerate the dessert, covered with plastic wrap, for a minimum of 4 hours.
- Sift high-quality cocoa powder over the surface just before serving.
