Ingredients
- 4 tablespoons Extra virgin olive oil
- 1 medium Yellow onion
- 2 medium Carrots
- 2 stalks Celery
- 2 cloves Garlic
- 400 grams Crushed tomatoes (passata)
- 1½ liters Vegetable broth
- 150 grams Green beans
- 200 grams Cooked chickpeas
- 2 medium Potatoes
- 100 grams Small pasta (ditalini or similar)
- 50 grams Grated Parmigiano Reggiano
- 10 leaves Fresh basil
- Salt, to taste
- Freshly ground black pepper, to taste
Directions
- Sauté the mirepoix (onion, carrot, celery) in olive oil until translucent.
- Add the minced garlic and sauté briefly until fragrant.
- Stir in the passata and cook over medium-low heat for 5-7 minutes to concentrate the flavor.
- Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 15 minutes.
- Add the green beans, chickpeas, and diced potatoes. Cook until the potatoes are tender.
- Stir in the small pasta and cook until al dente, following package directions.
- Adjust seasoning with salt and pepper. Serve with fresh basil and Parmigiano Reggiano.
