Ingredients
- 3 medium Potatoes
- ½ tsp Turmeric powder
- 1 chopped Fresh green chili
- 1 cm, grated Fresh ginger
- 2 tbsp Fresh cilantro, chopped
- ½ tsp Salt
- 1 cup Chickpea flour (besan)
- ¾ cup Water
- 2 cups (for frying) Neutral vegetable oil
- 2 pieces Pav bread (soft bread rolls)
- 2 tbsp Dry garlic chutney
- 2 tbsp Green cilantro-mint chutney
- 2 pieces Fried fresh green chili (optional)
Directions
- Boil potatoes until tender, peel, and mash them. Mix with chopped green chili, grated ginger, cilantro, and salt until a homogeneous mixture is formed.
- Shape the vadas to the size of a large meatball or a flat disc.
- Prepare a batter by mixing chickpea flour with water and salt until it has a thick but fluid consistency.
- Heat enough oil for deep frying over medium-high heat. Dip each vada into the chickpea batter and fry until golden brown and crispy.
- Drain the vadas on paper towels.
- Cut the pav buns in half. Spread the bottom with dry garlic chutney and the top with green chutney.
- Place one vada inside each pav bun and serve hot, optionally with a fried green chili on the side.
