  1. Peel and finely chop 2 green mangoes.
  2. Heat 1 tablespoon of vegetable oil in a skillet over medium heat. Add 1 teaspoon of mustard seeds, 0.5 teaspoon of cumin, 0.25 teaspoon of fenugreek, and 1 broken dried red chili. Sauté until the spices are fragrant.
  3. Stir in 1 teaspoon of grated ginger, 0.5 teaspoon of turmeric powder, and 1 teaspoon of chili powder. Cook for 1 minute.
  4. Add the chopped mangoes, 2 tablespoons of piloncillo, 2 tablespoons of white vinegar, and 0.5 teaspoon of salt. Mix well.
  5. Simmer, covered, for 15-20 minutes, stirring occasionally, until the mangoes are tender and the chutney has thickened.
  6. Let cool completely before serving.
