Ingredients
- 2 pieces Green (unripe) mangoes
- 1 tablespoon Vegetable oil
- 1 teaspoon Black mustard seeds
- ½ teaspoon Cumin seeds
- ¼ teaspoon Fenugreek seeds
- 1 piece Dried red chili
- 1 teaspoon Fresh ginger, grated
- ½ teaspoon Turmeric powder
- 1 teaspoon Chili powder (red)
- 2 tablespoons Piloncillo (or brown sugar)
- 2 tablespoons White vinegar
- ½ teaspoon Salt
Directions
- Peel and finely chop 2 green mangoes.
- Heat 1 tablespoon of vegetable oil in a skillet over medium heat. Add 1 teaspoon of mustard seeds, 0.5 teaspoon of cumin, 0.25 teaspoon of fenugreek, and 1 broken dried red chili. Sauté until the spices are fragrant.
- Stir in 1 teaspoon of grated ginger, 0.5 teaspoon of turmeric powder, and 1 teaspoon of chili powder. Cook for 1 minute.
- Add the chopped mangoes, 2 tablespoons of piloncillo, 2 tablespoons of white vinegar, and 0.5 teaspoon of salt. Mix well.
- Simmer, covered, for 15-20 minutes, stirring occasionally, until the mangoes are tender and the chutney has thickened.
- Let cool completely before serving.
