  2. Cook the potatoes until tender, peel, and coarsely mash them. Add cooked peas.
  3. Sauté chopped onion, grated ginger, and chopped green chili in a teaspoon of ghee until fragrant. Add to the potato mixture.
  4. Incorporate cumin, coriander, turmeric, garam masala, and amchoor. Add chopped cilantro. Mix the filling well.
  5. Divide the dough into portions. Roll each portion into a thin circle and cut in half.
  6. Form cones from the semicircles, moistening the edges. Fill generously and seal the edges well.
  7. Heat oil over medium-low heat. Fry the samosas until evenly golden brown and crisp. Drain.
