Ingredients
- 500 grams Chicken breast
- 4 units Fresh ají amarillo
- 1 medium Red onion
- 4 cloves Garlic
- 4 slices French bread (or crustless sandwich bread)
- 200 ml Evaporated milk
- 100 grams Walnuts
- 100 grams Grated Parmesan cheese
- 1 tablespoons Vegetable oil
- 240 ml Chicken broth
- Salt, to taste
- Black pepper, to taste
- 4 medium Yellow potatoes
- 4 units Eggs
- 16 units Black olives
- Chopped parsley, for garnish
Directions
- Cook the chicken breast in salted water with aromatic herbs (bay leaf, celery) until tender. Reserve the broth and finely shred the chicken.
- Clean the ají amarillos by removing veins and seeds. Blanch them briefly in boiling water to soften their flavor and color. Blend until a smooth paste is obtained and strain it.
- Soak the French bread in evaporated milk until it absorbs the liquid well. Drain the excess.
- Prepare a sofrito by sautéing finely chopped red onion and minced garlic in vegetable oil over medium-low heat until well cooked and translucent.
- Add the ají amarillo paste to the sofrito and cook for 5-7 minutes, stirring, until the ají changes color and releases its aroma.
- Incorporate the soaked bread and walnuts (previously toasted and ground) into the pot. Cook over low heat, integrating the ingredients, until a thick base forms.
- Add the shredded chicken and grated Parmesan cheese. Integrate well. Pour chicken broth gradually until the desired creamy and silky consistency is achieved.
- Cook over very low heat for 5 more minutes, stirring constantly to prevent sticking. Adjust seasoning with salt and pepper.
- Boil the yellow potatoes until al dente. Peel them and cut into slices. Cook the eggs until hard and cut them into quarters.
- Serve the hot Ají de Gallina over the potato slices, accompanied by hard-boiled eggs and black olives. Garnish with fresh chopped parsley.
