  1. Blanch spinach in boiling salted water for 2 minutes, cool in ice water, and purée finely. Set aside.
  2. Cut paneer into cubes. You can lightly sear them in ghee or leave them raw.
  3. Sauté finely chopped onion in ghee until golden. Add garlic and ginger paste, and chopped green chili. Cook for 2 minutes.
  4. Incorporate tomato purée and cook until oil separates, forming an aromatic base.
  5. Add ground turmeric, cumin, and coriander. Cook for 1 minute to toast the spices.
  6. Add the spinach purée, salt, and a little water if needed to adjust consistency. Cook over medium-low heat for 5-7 minutes.
  7. Fold in the paneer cubes and cream. Stir gently.
  8. Cook over very low heat for 3-4 minutes, allowing flavors to meld without vigorous boiling.
  9. Finish with garam masala and serve hot.
