  1. Finely slice the onion and julienne the potato. Chop the green chili and cilantro. Grate the ginger.
  2. In a bowl, combine the chickpea flour with turmeric, cumin, ajwain, and salt. Add the ginger, chili, cilantro, and spinach.
  3. Add water little by little, mixing until you get a thick batter that coats the vegetables. The consistency should be similar to tempura batter.
  4. Heat vegetable oil to 170-180°C in a deep skillet.
  5. Dip the vegetables in the batter and fry them in batches until golden and crispy. Remove and drain on paper towels.
  6. Serve the pakoras hot, ideally with Indian chutneys.
