Ingredients
- 1 cup lentils
- 1 piece carrot
- 2 stalks celery
- ½ piece white onion
- 3 cups homemade vegetable broth
- 2 tablespoons extra virgin olive oil
- 2 cloves fresh garlic
- 1 leaf bay leaf
- 1 sprig fresh thyme
- salt, al gusto
- freshly ground black pepper, al gusto
Directions
- Sauté the chopped onion in olive oil in a large pot over medium heat until it's translucent (about 5-7 minutes).
- Add the minced garlic and cook for 1 minute until fragrant. Stir in the diced carrot and celery and cook for 5 more minutes.
- Add the washed and drained lentils, bay leaf, and thyme sprig. Pour in the homemade vegetable broth.
- Bring to a boil, then reduce heat, cover, and simmer for 25-30 minutes, or until the lentils are tender. Stir occasionally.
- Remove the bay leaf and thyme sprig. Season with salt and pepper to taste. Adjust consistency with more broth if needed. Serve hot.
