Ingredients
- 4 large bunches Fresh parsley
- ½ bunch Fresh mint
- 2 medium Ripe tomato
- 1 medium Scallion (green onion)
- ½ cup Fine bulgur
- ¼ cup Fresh lemon juice
- 2 tablespoons Extra virgin olive oil
- 1 teaspoon Salt
- ½ teaspoon Freshly ground black pepper
Directions
- Wash and meticulously dry the parsley and mint. Finely chop both the parsley and mint leaves.
- Seed and dice the ripe tomatoes into brunoise (small, uniform cubes). Thinly julienne the scallion.
- Soak the fine bulgur in cold water for 15 minutes. Drain very well and squeeze out excess liquid.
- Combine the chopped parsley, chopped mint, diced tomatoes, and julienned scallion in a large bowl.
- Incorporate the drained bulgur into the herb and vegetable mixture.
- Emulsify the dressing: vigorously whisk the lemon juice, olive oil, salt, and pepper.
- Pour the dressing over the salad and mix with folding motions.
- Adjust seasoning to taste.
- Refrigerate for at least 30 minutes before serving.
