- 1 piece Red Onion
- 3 cloves Garlic
- 1 bunch Fresh Parsley

- 2 teaspoons Ground Cumin

- ½ teaspoon Baking Soda
- 2 tablespoons Chickpea Flour
- 1 teaspoon Salt
- ½ teaspoon Ground Black Pepper
- Vegetable Oil for Frying, as needed
- 4 tablespoons Tahini
- 2 tablespoons Lemon Juice
- 2 tablespoons Cold Water
- 1 clove Finely Minced Garlic

- Soak the dried chickpeas in cold water for 12-24 hours. Drain and rinse. The texture should be firm, not soft.
- Chop the onion, garlic, parsley, and cilantro. The proportion of herbs is key for flavor.
- Process the chickpeas, onion, garlic, parsley, and cilantro until a rustic texture is achieved, with some visible pieces.
- Incorporate the spices (cumin, coriander), baking soda, chickpea flour, salt, and pepper. Mix until the dough is homogeneous.
- Prepare the tahini: whisk tahini, lemon juice, grated garlic, and salt. Emulsify with cold water until a fluid but unctuous consistency is achieved. Adjust lemon and salt to taste.
- Form the falafel balls firmly. You can use an ice cream scoop to ensure a uniform size.
- Heat oil to 180°C. Fry the falafel in small batches until uniformly golden and crispy, approximately 3-4 minutes per side.
