Ingredients
- 50 grams Couscous
- 75 ml Hot water or vegetable broth

- ½ tablespoons Fresh lemon juice
- Fresh parsley, chopped, al gusto
- Fresh mint, chopped, al gusto
- 1 unit Scallion, chopped
- Salt, al gusto

Directions
- In a heatproof bowl, combine the couscous with salt. Pour the boiling liquid (water or broth), ensuring it covers the couscous by 1 cm.
- Tightly cover the bowl with plastic wrap and let it rest for 5-7 minutes, allowing the couscous to absorb the liquid.
- Fluff the couscous with a fork to loosen the grains and achieve an airy texture.
- Emulsify the extra virgin olive oil with the fresh lemon juice in a small container before adding it to the couscous.
- Add the finely chopped fresh herbs (parsley, mint) and chopped scallion to the couscous. Mix gently.
- Season with salt and freshly ground black pepper to taste. Stir to distribute evenly.
- Serve as a side dish, ensuring the herbs are visible for visual appeal.
